Vegetable spiedini - step-by-step instructions

Bright green vegetables are just awesome on the grill – convenient, as they come into season just as the weather permits us to fire up the BBQ. These make for a delicious antipasto or side for 2, or a very light meal for 1

You will need:


A little salt & oil

Your pack contains:

1. 1 skewer each of gem lettuce, aubergine & friggitelli peppers

2. Gremolata dressing


Preheat the BBQ – these vegetables should be cooked over a high, or medium-high heat

  • Pack 1.: Grill the vegetables on both sides until blistered, the blisters charred
  • Once grilled on both sides, season with salt and then anoint with oil
  • Pack 2.: drizzle the dressing over the grilled vegetabes
