Vitello tonnato is a gloriously retro cold dish, of veal with a tuna and anchovy mayonnaise.

We have freshened it up by turning it upside down, with a limpid pool of fragrant sauce (we use loads of Tuscan oil, fresh oregano and capers) under a delicate rose of  paper-thin, pink-rare veal and lifted by a few morsels of fresh crunchy vegetables and herbs - radish, broad bean, celery, capers and parsley. As pretty as a picture and a most refined antipasto for 2 (or light main for 1).

This is a delicate dish, suited best to a nutty or complex but dainty white wine (Verdicchio maybe, or Soave), or a bright and mineral  or light-but-complex red – Ruche, Schiopppetino, Barbaresco, Barolo, etc.
