NIGHT NEGRONI FOR 2 OR MORE

The Negroni has recently resumed its rightful throne, as King of the cocktails. Our night negroni is the classic – red vermouth, a bitter, and gin in equal parts – we call it a night negroni because we cant imagine it for breakfast. We have already stirred it over ice for you – all you need to do is chill it, pour on the rocks, and enjoy

For 2:
1. Pre-chill the bottle of Night Negroni thoroughly
2. Pour the chilled Night Negroni over copious ice cubes in a tumbler
3. Garnish with a slice of orange

For the Night Negroni Kit, we'll send over a bottle (70cl) of gin, and a litre each of bitters and vermouth. You will have more bitters and vermouth than you need. This will necessitate the purchase of more gin, of course. But then you will have leftover gin, and need to buy more bitters and vermouth. What a palaver!

You don't need any fancy cocktail kit to make this, just a spoon. Mix 25ml of each with ice and stir until the volume has doubled. Top up with more ice and garnish with a slice of orange. What could be simpler. The kit will make 28 Negroni.

DAY NEGRONI FOR 2 (serves 2)

Our Day Negroni is a white twist on the Negroni – identifiably a negroni, but also the opposite: light, bright, and approachable. They are Night and Day (you are the one…)

  1. Pre-chill the bottle of Day Negroni thoroughly
  2. Pour the chilled Day Negroni over copious ice cubes in a tumbler
  3. Garnish with a slice of lemon

SAKURA NEGRONI (serves 2)

Mancini make an incredible Sakura vermouth – a limited edition originally produced for Tokyo’s Mandarin Oriental. It is abundantly floral, built around sweet violets and cherry blossom. Here we have built a pink! Negroni around it, playing counterpoint to the flowers with the herbal flavours of gin and genepi.

  1. Pre-chill the bottle of Sakura Negroni thoroughly
  2. Pour the chilled Sakura Negroni over copious ice cubes in a tumbler
  3. Garnish with a slice of lemon

DACAPIRAC (serves 2)

Our take on a Sazerac, this is Bulleit Rye blended with Amaro Del Capo, a Calabrese amaro whose delicious blend of botanicals echoes the bitters in a Sazerac, and liquorice that plays the role of Absinthe. We have already stirred this over ice, so all you need to do is pre-chill it, and serve it either in a rocks or martini glass neat (ideally, pre-chill the glass), or on the rocks, in either case with a twist of lemon.

  1. Pre-chill the bottle of Dacapirac thoroughly
  2. If serving neat, pre-chill 2 tumblers or martini glasses
  3. Pour the chilled Dacapirac into the pre-chilled glasses, or over ice cubes in a tumbler if you prefer
  4. Garnish with a twist of lemon – for this cocktail it is best to cut a broad, thickish sheet of lemon zest (with a potato peeler or sharp paring knife), and squeeze it generously over the cocktail to release the oils from the skin.

GRAPPARITA (serves 2)

There is a wonderful harmony between aromatic grappa and fine tequila. Here we have made a mock-margarita using a fine Muscat grape grappa, Ocho Blanco tequila, and lemon (fresh juice, and limoncello). You can salt the rim, or not, as you prefer. We serve this on the rocks – but if you prefer your margarita up you can serve it in chilled martini glasses.

  1. Thoroughly pre-chill the bottle of Grapparita (in fact, because it is made with fresh lemon keep it chilled from receipt until consumption, and drink it within 5 days)
  2. If serving neat, pre-chill 2 martini glasses (we prefer it on the rocks)
  3. If you want a salty rim on your chilled martini glasses, or on tumblers, rub half the rim gently with the cut surface of a lemon and coat it in just a little salt.
  4. Pour the chilled Grapparita into the pre-chilled glasses, or over ice cubes in a tumbler
  5. Garnish with a slice of lemon

ESPRESSO MARTINI (serves 2)

Golly this is delicious! – We have always rounded out our espresso martini with a little Frangelico (hazelnut liqueur), and make it with artisanal Colombian coffee beans. You will need a blender.

  1. Thoroughly pre-chill 2 martini glasses, and the bottle of espresso martini
  2. Put the chilled espresso martini in a blender along with 50g deep-frozen ice cubes
  3. Blend for a full 2 minutes, until very creamy-frothy, and all the ice is long gone
  4. Pour into the chilled martini glasses, and leave it a minute to settle, as Guinness would

BELLINI KIT (serves 6)

The bellini is one of those rare drinks, always appropriate, and always loved. Timeless, elegant, joyful, and amost childishly scrummy: Harry’s Bar’s gift, from Venice to the world. 

To make it properly properly it should be stirred over ice, but you can just as easily (and nearly as well) build it in the glass. The glass itself ought, properly, to be a stemless champage flute – or tall, thin-walled, vaguely barrel-shaped but small glass. If you don’t have such a thing, make it in tumblers or champagne flutes as you prefer. This makes 4 to 6.

IF YOU’RE AT HOME: make the drink by stirring over ice 

  1. Thoroughly pre-chill the bellini mix and the prosecco (in fact, as the bellini mix is fresh peach, you must keep it in the fridge from receipt, and use within 5 days)
  2. Pre-chill your glasses
  3. Find a suitable jug, and half fill it with ice
  4. Pour one part of peach Bellini mix and two parts prosecco (if making the lot, use all the peach Bellini mix and about half the prosecco now) into the jug, and stir well for a good 2-3 minutes
  5. Strain it into the glasses
  6. Top with a further 1.5 parts prosecco (i.e. the remainder of the bottle, if you’re making the lot)
  7. Swirl the glasses slightly, until they are pink to the top

 IF YOU’RE IN THE OPEN AIR: build the drink in the glass

  1. Thoroughly pre-chill the Bellini mix and the prosecco (in fact, as the bellini mix is fresh peach, you must keep it in the fridge from receipt, and use within 5 days)
  2. Pre-chill your glasses
  3. Divide the peach Bellini mix between the glasses
  4. Pour a little bit (an equal part) of prosecco into each glass, swirl to mix
  5. Add the same amount again of prosecco, swirl to mix
  6. Top to the desired peachiness with more prosecco

A red Martini! The 50:50 (very wet) Martini is an exaltation of vermouth – and here we are celebrating Berto’s faultless vermouth rosso. Blended with Stolichnaya Vodka and already stirred over ice, this is pour-and-go. Just pre-chill the bottle of berto rosso martini 50:50, and martini glasses (though you can also serve it on the rocks).

  1. Pre-chill 2 martini glasses (unless you want to serve it on the rocks), and chill thoroughly the bottle of Berto rosso martini 50:50
  2. Pour into the chilled martini glasses, or if you prefer into tumblers over ice
  3. Garnish with a twist of lemon

Friuli, in the Far East of Italy, is a fine place to visit, and has long been known as the the homeland of some of Italy's finest whites and light reds. Ermacora is one of Phill's favourite winemakers in the Colli Orientali - the Eastern Hills, which are indeed as Far East as you can get (within Italy).

Weighty (but unoaked), with notes of apricot and almond, this brilliant white is perfection as Dario Ermacora serves it: with prosciutto and melon, vignarola, pickled wild asparagus or his wife's juicy roast chicken.

This cheeky little Fiano offers great bang for the buck, and is grown in Puglia, where winemaking has in recent years taken leaps and bounds in terms of quality and expertise.

This is simply the best Falanghina there is! It's pricey, but something special, and absolutely worth it. QUINTODECIMO are recognised as one of the finest in the region, and we list their Greco Di Tufo and Taurasi Riserva too. Both are just as impressive. 

It is refreshing, floral and green, with bright fruit and life on the tongue. Rosemary and fennel lift the palate, and the finish is satisfyingly long. Do dinner justice and enjoy this with seafood and loved ones. One may not be enough.

A wine of character and tradition. Later harvest than most in this category, with just 30 hours of skin contact. This is a great way to experience an orange wine which is not all about the method, the wine behind it all is rather good too. An intriguing nose of beeswax, mandarin, fresh rosemary and preserved lemon, with a clean dry mineral finish.

From the rolling hills of the Maremma on the Tuscan coast, this fine blend (Cab. Sauv., Cab. Franc, Petit Verdot, Merlot) leads us towards 'Super Tuscan' territory. This though is not as huge as the blend suggests, so we have structure and depth, but also finesse and lively red fruits to keep us reaching for the bottle. We've found that one bottle just isn't enough of this beauty.

A superb ethereal red from the prized northern slopes of Mt.Etna in Sicily. Not just a single cru (SANTO SPIRITO) or single vineyard, this is a single parcel (number 466, if you're asking!), vinified in very sexy (if you're a bit of a wine geek like me) wooden eggs. Medium to light in body, but serious length and minerality give all the backbone you need. I wanted to buy all they had when I visited, but they only let us have half, so enjoy it while you can.

A rather lovely Brunello from an early drinking vintage. 2014 Brunello is spot-on, with the right amount of sweet fruit to flesh the wine out and carry those lovely leathery tannins. A fine, structured Barolo from a great vintage. Dryness & structure is the key here, with spice and woodiness in the background. Classic perfumed nose, with flowers and red fruits, mixed with tingles of leather and tar, this will not disappoint! Not hefty, and so perfect with truffles and white meat. Game, or dare I say it, turkey. A special bottling to celebrate 150 years since the unification of Italy, each bottle is labelled differently to showcase their labels through the ages. Barolo is always something special, so open this with somebody special and enjoy it.

Main characteristic: DARK & EARTHY

Dark fruit, loads of structure and big, grainy tannins. A fine example of a lesser-known but deliciously chewy and savoury grape from Piemonte. Freisa is a genetic cousin of Nebbiolo, hence the structure, but it tends to have more heft and plummy fruit behind the tannin, and an earthier, more robust character.

Main characteristics: SMOOTH & SEDUCTIVE

Classic blend of the region, showing the proximity to France rather well. This is a star of a wine from the celebrated Ca del Bosco, masters of Franciacorta. Reading the blend would lead you to think of a heavy, rich wine, but this has such lightness of touch and finesse. A deeply regal red, with dark fruit and licorice hints and privately educated tannins.

A deep, characterful red from FARO, in the extreme north east of Sicily, overlooking the Messina Strait. Winds whip around this headland where the Mistral & Scirocco meet, hence the name, TERRA DI VENTO, land of wind. The vines here are sturdy, as are the wines. Deep and rich, but soft and juicy. Very easy to enjoy, particularly with a meaty pasta or plate of cheese.

WOW! I had no idea Italian Pinot Noir could have such finesse until this gem from Lombardy. Raised on a fine rambling shooting estate, this is the oldest planting of Pinot Noir in the country, names for a game bird, the pernice, or partridge. This isn't a playful light pinot, rather a wine of social status and depth, at once pretty and deep. It's drinking very well now, or will age well if you can restrain yourself. Perfect with game birds, as you may imagine.

A charming blend of Sardinias most well known grapes. Cannonau (Grenache) brings bramble, spice, and depth to the party, while Monica adds elegance and quaffability, tempering the darkness. While the term versatile can sometimes mean lacking character in a wine description,  this bucks the trend, and can pair very well with deep seafood stew, anything tomato based, meat and veg dishes. Great value too!

Main characteristic: SAVOURY AND 

An ethereal delight. Light in the glass, with fresh cut flowers and a hint of green pepper on the nose. Not fruit forward by any stretch, especially since it should be enjoyed lightly chilled, but there is definitely a tough of the rose-hip there. A wine to take outside if you can, versatile and great with light tomato sauces and simple soups, leading to fish based mains, Ligurian pastas and blossom in the air.

A fresh and lightly honeyed Moscato Passito. Just enough stickyness to make it work fabulously with a proper cream cake, but light enough to not get in the way and take over the party. Touch of orange blossom and typical moscato flowers on the nose. I've served this one at the restaurant for years, so I know it will make you smile!

PICOLIT ERMACORA (500ml)

A properly delicious burnished sticky from our friends in Friuli. Picolit, the grape, is rather rare to start with, and here it's dried and aged in oak, reducing the yield even further. I love that even though it is rich and sweet, it retains a touch of orange zest and a spark of acidity. Great on its own, or with a pudding of course. Share and savour.
