I am not Italian, and thus not tied to any particular region – but if I were, it would be Lazio. For three generations, my family have had a house in Sperlonga, once an obscure fishing village, now a popular summer resort, located on the Lazio coastline, near equidistant between Rome and Naples. Here we feast on the bounty of both Lazio and Campania. Mozzarella from the South & wild mushrooms from the hills that surround Rome.   

*this is a wild seasonal product so availability of a particular type of mushroom is not guaranteed.

For your meal you will need:

A large pan for boiling, and a large pan for sautéing

A colander

Not strictly necessary, but a pair of tongs are near invaluable when cooking pasta

The detailed recipes for the dishes are here, but in essence:

  • Allow both mozzarella and tomatoes to come to room temperature, then eat
  • Once eaten, saute your mushrooms, and cook your pasta. Mix the two together, and pig out on ‘little piglets’
  • Dress your salad, either before eating the pasta or immediately after
  • Let your pie also come to room temperature, and feast

Here, we feast on food directly from Rome – burnt ricotta pie from the Ghetto, and suckling pig that certainly isn’t.  

For your meal you will need:

A baking tray

Some Olive Oil

A large ovenproof frying pan

A second frying pan, of lesser size

The detailed recipes for the dishes are here, but in essence:

  • Preheat your oven, oil your carrozze, and bake at high temperature
  • Meanwhile, place the pig in the oven
  • Eat the carrozze
  • Remove the pig from the oven, warm the chestnut sauce
  • Saute the potatoes and cicoria
  • Eat a pig, like a pig
  • Let your pie also come to room temperature, then feast on that too

I grew up, since before memory, holidaying in Sperlonga – and still do. It is a small fishing village halfway between Rome and Naples, and over my 40 years grown into a boisterous summer resort for Roman and Neapolitan youth, who strut the streets and beaches like peacocks in an overcrowded enclosure. The rest of the year it is an oasis of tranquility, with sweeping views over the Ulysses coastline – the landscape, archaeology and culture tell of the earliest roots of our modern civilisation. The food speaks of land and sea – the dishes in this menu are for me the most evocative: spaghetti alle vongole (lunch almost every day at a beach shack, normally Bazzano resort or Il Selvaggio, each worth the very beautiful beach hike to get to); mozzarella paired with salted anchovies and encased in a fine crust of bread; and salads for my mum, who loves them and taught me to love them and to make them with equal relish 

For your meal you will need:

A baking tray

A large pot for the pasta

  • Preheat your oven, oil your carrozze, and bake them at high temperature
  • Place on a pan of water for the spaghetti
  • Eat the carrozze
  • Cook the spaghetti
  • While the spaghetti is cooking, cook also the clams
  • Eat the pasta then dress the salad, or vice versa, then eat one followed by the other
  • Let your pie come up to room temperature, then eat that too

DAY NEGRONI FOR 2

If there's a cocktail that's taken the world by storm in recent years, it's the Negroni. The world is behind the times - you and I have known, since we learned what good meant, that if there was one cocktail to start the evening off well or finish it off definitively, it's the Negroni.

This is our twist on the classic, which we have named the Day Negroni (as it's rather lighter than the classic and delicious at any time of the day), made with all Italian ingredients (1/3 each of bitters, white vermouth, and gin) and garnished simply with a slice of lemon. We'll send over 200ml of the deliciously moreish concoction which serves 2, plus a lemon, which you can slice, or make one of those fancy curls of zest if you're the type. Chill it well before serving, and serve on the rocks or not. We'll leave that bit up to you.

This is our classic, which we have named the Night Negroni (as we have one a tad more suited for daytime drinking), made with all Italian ingredients from Antica Distilleria Quaglia, near Turin.  We'll send over a bottle (70cl) of gin, and a litre each of bitters and vermouth. You will have more bitters and vermouth than you need. This will necessitate the purchase of more gin, of course. But then you will have leftover gin, and need to buy more bitters and vermouth. What a palaver!

You don't need any fancy cocktail kit to make this, just a spoon. Mix 25ml of each with ice and stir until the volume has doubled. Top up with more ice and garnish with a slice of orange. What could be simpler.

This kit will make 28 Negroni.

From the masters of Frascati, Fontana Candida, this turns the decades of derision of Frascati on it's head. No longer the typical cheap trattoria plonk, this is a refined, powerful wine. A hint of oak along with some oiliness on the palate make for very much a main course wine, and something to challenge expectations. .
Great with meat, and especially our suckling pig, but also really good with simple Roman pasta. Think carbonara & cacio e pepe and you won't go far wrong at all!

Unusually for a Gavi, this is refined, playful and great value. Made by San Pietro who are in the DOCG of San Pietro (commune di Gavi), we just love it. Bright, sprightly, mineral and crisp - this is everything you want in a Gavi, plus a delicate accent of meadow flowers to make you smile.

Keep a couple of bottles in the fridge to celebrate every time the sun shines. Also good with antipasti.

A gorgeously refined blend from Friuli Colli Orientali in Italy's far East. Pale yellow, with Williams pear and jasmine, given real poise with balanced acidity and minerality.

Quite a serious drop which lends itself to a properly good fish dish like grilled turbot or our salt baked bream. Great with roast pork too, and with the local delicacy, sweet Proscuitto di San Daniele.

This is simply the best Falanghina there is! It's pricey, but something special, and absolutely worth it. QUINTODECIMO are recognised as one of the finest in the region, and we list their Greco Di Tufo and Taurasi Riserva too. Both are just as impressive. 

It is refreshing, floral and green, with bright fruit and life on the tongue. Rosemary and fennel lift the palate, and the finish is satisfyingly long. Do dinner justice and enjoy this with seafood and loved ones. One may not be enough.

Friuli, in the Far East of Italy, is a fine place to visit, and has long been known as the the homeland of some of Italy's finest whites and light reds. Ermacora is one of Phill's favourite winemakers in the Colli Orientali - the Eastern Hills, which are indeed as Far East as you can get (within Italy).

Weighty (but unoaked), with notes of apricot and almond, this brilliant white is perfection as Dario Ermacora serves it: with prosciutto and melon, vignarola, pickled wild asparagus or his wife's juicy roast chicken.

A rather big boned wine from a rising star of a grape called Timorasso. Grown in the hills of eastern Piedmont above Genoa, when young it can be readily tropical and lively, with bracing acidity. Ours has been given time to develop though into a very different beast, with power and weight carried along by great structure.

If you're a Burgundy fan, or enjoy old Chenin Blanc or Riesling like me, you should definitely give this a try, maybe with roast (or barbecued) pork.

Excellent with vitello tonnato & cold cuts, and great with poached salmon.

Main characteristic: TEXTURED & INTRIGUING

A wine of character and tradition. Later harvest than most in this category, with 30 hours of skin contact, it's a great way to experience an orange wine which is not all about the method. The wine behind it all is rather good too. An intriguing nose of beeswax, mandarin, fresh rosemary and preserved lemon, with a clean dry finish.

Main characteristic: RICH AND SPICY

A cult gem from Blera, just north of Rome. San Giovenale grow deep, full fruit, and pick them when they're fit to burst with flavour. Seductive dark cherries, blackberries, sweet spice and lavender enchant the nose, while the first sip reveals wild berry jam, dried herbs and hints of smoke and tobacco along with a distinctive minerality. Definitely something special. We're not usually ones for an international blend at Bocca di Lupo, but this was far too good to turn down.

I think the best way to describe this is a 'cheeky red'. Great with pasta and pizza, and a really good drop to splash around at lunchtime (12.5% abv). Bright red, pure juicy fruit and a hint of pepper, this wine is without pretension and is all the better for it.

If you like your wines big, then this is big with a capital 'B'. Lots of dark fruit, a kiss of oak, and yes, a touch of sweetness carry along a robust wine of texture that's also balanced enough to actually drink and enjoy. Not cheap, and Amarone never should be, this is something special.

Main characteristic: DEEP, FINE & STRUCTURED

From the rolling hills of the Maremma on the Tuscan coast, this fine blend (Cab. Sauv., Cab. Franc, Petit Verdot, Merlot) leads us towards 'Super Tuscan' territory. This though is not as huge as the blend suggests, so we have structure and depth, but also finesse and lively red fruits to keep us reaching for the bottle. We've found that one bottle just isn't enough of this beauty, so offer it in magnum too.

Main characteristic: EARTHY & MEMORABLY GOOD

So, this is a red from Mt.Etna, but not an Etna Rosso. The grape used isn't allowed as a single varietal wine in the appellation, so this is labelled a 'Sicilia Rosso'. As the 'ugly duckling' of the area though, this is a stunning wine. A wine that when we tasted it, expletives abounded. And good ones. This is deep and earthy, feels so young and sprightly at 9 years old, and is a real delight. We love it, and for once, it really doesn't matter too much what you match it with, you will love it too. Mineral and smokey (that's volcanoes for you!), deep fruit without weight, and a seriously long finish for a wine at this price.

A superb ethereal red from the prized northern slopes of Mt.Etna in Sicily. Not just a single cru (SANTO SPIRITO) or single vineyard, this is a single parcel (number 466, if you're asking!), vinified in very sexy (if you're a bit of a wine geek like me) wooden eggs. Medium to light in body, but serious length and minerality give all the backbone you need. I wanted to buy all they had when I visited, but they only let us have half, so enjoy it while you can.

A gluggable, juicy baby from one of our favourite Brunello producers in Montalcino, Tuscany. Sangiovese and Merlot combine to give sweet red fruit and depth with classic Sangiovese acidity and tannins.
Great with meat, just like our spicy sausages, but also really good with a simple pasta with tomato sauce.

Here, Vallone have taken the technique from Amarone and applied it in Puglia. Grapes are dried after drinking in the sun to intensify the flavour, and, in the best vintages only, this gem is made of the resulting powerful juice. 12 months in oak rounds off the edges, and this opulentwine is left in the bottle to relax for a few years before you get to enjoy it. Not all sweetness either. This is meaty and savoury. If you like Napa Cabernet, this is for you.
Great with meat, of course, and for a cold evening by the fire.

A properly delicious burnished sticky from our friends in Friuli. Picolit, the grape, is rather rare to start with, and here it's dried and aged in oak, reducing the yield even further. I love that even though it is rich and sweet, it retains a touch of orange zest and a spark of acidity. Great on its own, or with a pudding of course. Share and savour.

Balsamic reductions have become very fashionable in recent years, but they are often too sweet and sticky, made by rapidly boiling the balsamic down to a thick glaze. The Vecchia Dispensa 'Ricco' is no such thing, however. Made from an eight year vinegar naturally thickened within Slovenian oak barrels in the family's attics over the hot summer months, it is useful for dripping over a finished meal to add little bursts of flavour.
