Here, Vallone have taken the technique from Amarone and applied it in Puglia. Grapes are dried after drinking in the sun to intensify the flavour, and, in the best vintages only, this gem is made of the resulting powerful juice. 12 months in oak rounds off the edges, and this opulentwine is left in the bottle to relax for a few years before you get to enjoy it. Not all sweetness either. This is meaty and savoury. If you like Napa Cabernet, this is for you.
Great with meat, of course, and for a cold evening by the fire.
