This is a wonderful time of year as summer vegetables hit their peak – sun baked mauve aubergines, dark red & green Italian peppers and crisp Romana courgettes. Here we offer them ready to grill – and accompanied by our finest olive oil, from La Bandiera in Tuscany.
Your pack serves 2 and contains:
- Dark red & green Italian peppers, sliced
- Mauve aubergines, sliced
- Romana courgettes, sliced
- Some very fine olive oil
- Heat your barbecue until the flames have died and the hottest white embers remain – or alternatively, heat a griddle pan until smoking.
- Season all your veg with coarse salt, and rub with half the olive oil
- Grill the courgettes for 2 minutes per side, and the peppers & aubergines for 4 minutes per side, until softened and lightly blistered
- When all the veg is cooked, remove it from the heat, arrange neatly on a serving platter, and drizzle with the remaining oil
