I (Jacob Kenedy) lay down the gauntlet to any chef in the world, who can propose a dish better than spaghetti with tomato sauce. it is always the best meal of the day, and is perhaps the only dish I could happily eat every day - of a life as long as a piece of spaghetti.
You could say there are as many ways to cook tomato sauce as there are Italians - but it would be an underestimation, as each person might have more than one way. This is one of mine - and my fanciest - half a sauce of san Marzano tomatoes cooked so thick you can stand a spoon in it, and half raw datterino tomatoes to freshen and brighten the dish.
If there are two dishes I would define myself by, there are this, and lettuce with my mum's dressing.
