Always a firm favourite on our menus at Bocca di Lupo, and perhaps our ‘signature’ sausage, our spicy sausages contain nothing more than the finest pork (we use a blend of shoulder and belly from Tamworth pigs, supplied by our friends at Swaledale in Yorkshire), wine, salt, fennel seeds, chilli & a little paprika.
Like all classic Italian sausages, they contain no rusk (i.e. breadcrumbs) – so they are more intensely flavoured (and gluten free) – though requiring slightly more careful cooking. We slice them open, grill them cut side down over a fierce heat for a few minutes before flipping – and we like them just on the edge of pink. You, on the other hand, are free to cook and eat them however you like (they can also form the basis of a superlative ragu).
