The secret that hides in plain sight, is that pasta with pesto Genovese is supposed to be cooked with green beans and potato.

If you haven't tried it - well, you don't know what you are missing, but the little chunks of giving potato and refreshing green beans enliven the dish, and make every mouthful a little surprise.

We make our pesto fresh, taking care to keep it cool while we work, so the fragrant Ligurian basil never loses the delicacy of its aroma. European pine nuts - as hard to find as hens teeth - add a resinous depth, and a blend of pecorino Romano and parmesan give farmyard punch and complex umami to the sauce.
